Sarah, technically you’re referring to screen recordings, not screen captures (screen captures are like photographs of your screen – no motion).
FastStone Capture ($20) is great for both screen recordings and screen captures. Loads of features, and very stable.
Screencast-O-Matic (free or Pro for $15/year) is another great free/inexpensive option.

I personally am a big fan of Camtasia as found it to be best for editing and functions well worth the investment as not expensive given its capabilities and flexibility.
Hi Sarah, in the past I have tried Cam Studio, the drawback is it only saves in avi format, which can’t be loaded into Movie-maker for editing
You can set the screen capture to region, which allows you to choose what part of the screen you want capture
Later on I downloaded and used Jing, but again the files it save in can’t be edited without converting
I also have also used ezvid, although this will do a screen capture, unlike cam Studio you can’t select a section of screen and it only saves them within the program itself
But then gives the option of instant upload to YouTube
